Los Banos deli has recipe for European fare

Old World melds with local flavors

Pierre's Delicatessen is a throwback to Old World delis, "the kind of thing you don't see anymore," owner David Daguerre said.

The business at 933 Sixth St. opened July 2.

Daguerre said the deli is a melting pot of European tastes. The foods and products especially cater to Portuguese, Italian and Basque enthusiasts.

Daguerre, a contractor, transformed the empty building by hand. He put up the wall that separates the deli from neighboring Una Bella Salon & Spa, owned by his wife, Susan. He also put in the floor, counter and bucket seats.

"It's something I always wanted to do," he said.

Daguerre said he wants to offer as much local fare as possible, with squashes and Italian peppers from Los Banos and coffees from Milone Brothers Coffee Co. in Modesto.

One hard to find item in Pierre's is whole-leaf tea, which is not bagged, comes in bulk and is brewed like coffee.

The deli carries specialty meats and cheeses, like prosciutto, mortadella and an assortment of salamis. The breads come daily from Firebaugh French Bakery.

"If you don't have good bread, you don't have a good sandwich," Daguerre said.

Pierre's Delicatessen can carve out its own niche, Daguerre said, because no other place in town has the same things on the menu. The sauces, meatballs and salads are hand made and, along with the coffee, are different from the others in town.

The most popular sandwiches so far, he said, are the mama's meatball, a classic meatball sub, and the pesto pollo, made with homemade pesto sauce, red peppers and mozzarella on ciabatta bread.

The chalet, which is served on Fridays only, is a nod to a defunct business that populated Pacheco Boulevard, Chalet Basque. It's a New York steak sandwich on a grilled French roll.

"They go like crazy. We sell out every Friday," Daguerre said.

Pierre's Delicatessen is open from 8 a.m. to 5 p.m. Monday through Friday, and from 8 a.m. to 2 p.m. on Saturday.
